I am fully prepared to accept any hit on Chipolte stock for this one. But it’s worth it.
2 cups of brown rice divided, if I had to guess 1/3 cup here. Add one can of black beans, undrained, and mix (prob 1/2 can when divided). Mix in sauteed onions and peppers for flavor and add hot sauce – I use the Taco Bell sauce you can buy at the grocery store. Alternatively use 6-7 tiny packets from the restaurant. Top with cheese and crunchy bits of chips.
I usually like a side of broccoli or corn if I’m having this for dinner.
You can add chicken, beef or roll it all up in a burrito. Or serve over lettuce. SO flexible. And yummy.
